Well .... I tried it. I made some beet kvass and some sauerkraut. It worked. I did not ferment a poison. The kvass turned out well as did the sauerkraut. I dislike store bought sauerkraut considerably. I never knew making it myself at home could transform it into something pleasant tasting as well as beneficial. Plus there is a remarkable variety of variations by doing it myself.
I think I am hooked.
